Grilled Chicken and Pecan Salad Sandwiches

Here's a quick and healthy meal that the whole family will absolutely love!!! Grilled Chicken and Pecan Salad. Now before I get to the fixins, I gotta share some tips with y'all. I'm a picky--and I'm serious...my food can't even touch that's just an example of HOW picky I am...so you know my food is going to only be the BEST--picky eater, so when you use grapes in this recipe, make sure you buy the best. Dig through the bags of grapes and find the firmest ones you possibly can find! You don't even want to be able to squish them a little bit. As well as the apples, they need to be a good firm apple, not grainy or soft, it needs to crunch, I buy Honey Crisp. Same with the lettuce that you choose to go onto the sandwich, get the most crisp you can find. I buy "Iceberg" lettuce...but that's what we have here. Okay!!! I'll shut up and get on with the recipe now ;)

Fixins:
  • 2 1/2 Cups Grilled Chicken Breast, cubed
  • 1 Cup Red Grapes, sliced in half
  • 1 Cup Red Apple, diced (you can leave the skins on
    or take them off, whichever you prefer, I like it with skins on)
  • 1 Cup Pecans, chopped (not real fine, you want chunks,
    not dust or crumbles)
  • 1/2 Cup Celery, chopped (Smaller pieces if you don't like celery, like me)
  • 1/2 - 3/4 Cup Mayonnaise (Depending on how wet you want it)
  • 1 Tbsp Lemon Juice (Juice of 1 Lemon)
  • Salt and Pepper to taste

In a medium sized bowl add diced apple, and one tablespoon of lemon juice.  Stir lemon juice into apples coating them well.  This will help keep the apples from turning brown.  Add cubed chicken, sliced grapes, chopped celery, and chopped pecans.  Mix well until everything is mixed through.  Add 1/2 cup mayonnaise, if the mixture is too dry you can add another 1/4 cup of mayonnaise.  Add salt and pepper to taste.  Allow flavors to marry in a covered bowl in the refrigerator for about 1 hour before serving. Serve on thick Whole Grain Bread (I hate whole grains but not with this recipe)

You can also make this recipe even better and toast the pecans before putting them into the mixture. Just make sure after you toast them that they cool completely. :)
